Smoked Salmon Breakfast

Ingredients
  

  • 4 eggs whisked
  • ½ teaspoon avocado oil
  • 4 ounces smoked salmon chopped
  • For the sauce:
  • 1 cup coconut milk
  • ½ cup cashews soaked, drained
  • ¼ cup green onions chopped
  • 1 teaspoon garlic powder
  • Salt and black pepper to the taste
  • 1 tbsp lemon juice

Instructions
 

  • In your blender, mix cashews with coconut milk, garlic powder and lemon juice and blend well.
  • Add salt, pepper and green onions, blend again well, transfer to a bowl and keep in the fridge for now.
  • Heat up a pan with the oil over medium-low heat, add eggs, whisk a bit and cook until they are almost done
  • Introduce in your preheated broiler and cook until eggs set.
  • Divide eggs on plates, top with smoked salmon and serve with the green onion sauce on top.
  • Enjoy!
