Breakfast Casserole Recipe

Ingredients
  

  • 10 eggs
  • 1 pound pork sausage chopped
  • 1 yellow onion chopped
  • 3 cups spinach torn
  • Salt and black pepper to the taste
  • 3 tablespoons avocado oil

Instructions
 

  • Heat up a pan with 1 tablespoon oil over medium heat, add sausage, stir and brown it for 4 minutes.
  • Add onion, stir and cook for 3 minutes more.
  • Add spinach, stir and cook for 1 minute.
  • Grease a baking dish with the rest of the oil and spread sausage mix.
  • Whisk eggs and add them to sausage mix.
  • Stir gently, introduce in the oven at 350 degrees F and bake for 30 minutes.
  • Leave casserole to cool down for a few minutes before serving it for breakfast.
  • Enjoy!
