pork sausage
chopped

yellow onion
chopped

spinach
torn
Salt and black pepper to the taste

avocado oil
Instructions
Heat up a pan with 1 tablespoon oil over medium heat, add sausage, stir and brown it for 4 minutes.
Add onion, stir and cook for 3 minutes more.
Add spinach, stir and cook for 1 minute.
Grease a baking dish with the rest of the oil and spread sausage mix.
Whisk eggs and add them to sausage mix.
Stir gently, introduce in the oven at 350 degrees F and bake for 30 minutes.
Leave casserole to cool down for a few minutes before serving it for breakfast.
